The best technical book I have read is Brewing Yeast and Fermentation by Chris Boulton and David Quain

Wiley online is a good source of technical brewing information quite a lot for free.

I once read a twitter thread where this question was asked to a bunch of pro brewers. The IBD course literature, Technology Brewing and Malting by Wolfgang Kunze and Malting and Brewing Science 1 & 2 by Hough, Briggs, Stevens and Young, all got the most mentions.

What have you read already?
I'd certainly go along with "Yeast", above. There are three other books in the series with good bits in them, but not as useful as "yeast".
Scott Janish "The New IPA..." is an informative read.
