Hello,

Cannot find a specific recipe for TurboCider.

I gather 5 litres of apple juice (Concentrate I presume) + yeast - should I be adding sugar to the recipe?

AJ + yeast is all you need.
Once fermented, add a little sweetner + a bit of tannin.
Store for several weeks, job done!

I presume Tannin before ferment.

Should I be adding Pectolase and yeast nutrients etc.

Doesn't need pectolase, a bit of nutrient can't hurt but isn't required.

Coz in the first 24 to 48 hrs, it foams up a LOT. You need plenty of headroom

In a 24 ltr batch I hold back 4 ltrs untill the "madness" has passed.

Well it depends how big your FV is. The stuff wants a bit of headroom, is all.
I do a gallon at a time, in demis, so I leave about 750ml headroom, top up when the fast bit subsides.
