I tried a Kernal - Nelson Sauvin IPA last night and really loved the aroma, a kind of sugary sweetshop smell.. Would anybody know how to get this? Would it be a particular Yeast or malt?

It's purely down to the Nelson Sauvin hops. Evin uses US-05 yeast, no particularly special malts.

Dry hop. And then dry hop again.
 
I had some delivered today so Ill give it a try, I thought it may have been some special mix of grain or yeast.. Thanks James

Evin runs a fantastic brewhouse and is even open on Saturday afternoons to taste/buy direct from the brewery.
I can't wait for my next visit to see his new 20barrel setup.
