Hello,

My beer is reaching the final stages and I was wondering if I would ruin my beer by leaving it outside in the barrel to clear for a day or two.

It's pretty cold at the moment mind -2 -3.

If the brew was to freeze, and you could remove the ice it may raise the alcohol content. Some breweries use this method like BrewDog to raise the alcohol content of their beers. I think I read somewhere it's illegal, but ops....accidents will happen. :pray:

You could stick it in a garage/shed with a coat over it....fingers crossed.
 
You ideally don't want it freezing and will the unpredictability of the temperatures at the moment it would be best to follow DJs advice and move it to a garage or hut if possible.
 
I know one brewery that takes their beer to -1C prior to packaging - that's Fullers. Temps above freezing would also prob be just as effective. So as DJ says the garage or shed would be okay and just as effective.

Depends on the alcohol content and final grav but it would take inland Scottish Winter temps to actually freeze the water in the beer...you would have to move to Aboyne or somewhere in deepest Grampian where the temps rarely go over -10C during cold snaps. They you would have a huge beer flavoured slush puppy...
