Summer Berry Cider.

This is more of an experiment than anything.

Ingredients

5x 1L Tesco 74p Apple Juice from Concentrate
1x 1.75L Asda Pure Apple Juice Not from Concentrate
5kg Jonagold Apples
1.5kg Cooking Apple's
2x 500g Frozen Summer Berrys
200g caster sugar

Firstly I boiled the concentrated apple juice gently for 30mins (In two batches) then put it straight into my fermenting bucket allowing time for it to cool while preparing the other items.

Using my juicer I juiced all apple's , saving waste. Removed all the bitter tasting foam off the top then added to the bucket.

I then put the frozen fruit in a large pan adding 2pints of water and 200g caster sugar bring to a gentle simmer. While simmering I used a hand blender to make solution completely lump free. Then into the bucket.

The remaing waste of apple's I put into a large pan adding 1.5L cold water bring to a gently simmer and then again with the hand blender making an appley mush.

I then passed the 'Mush' (once cooled) through a coarse straining bag to remove any juice left in the waste as my juicer isn't really the greatest.

Finally as the 1.75L apple juice was not from concentrate I poured straight into the bucket.

Give it all a good stir and allow time to cool to a suitable temperature before adding yeast.

I'm using a sachet of Cider yeast and sweetener (unbranded) from Julie's Home Brew Supplies in Manchester.


This has made approximately 15L in my bucket now while this is brewing I have to source some bottles...

I'll get back to you all on how it tastes brewed, however I had a sip before adding yeast to check my starting flavour and I was delicious so hopefully a good start.
 
No didn't think it massively necessary as it is mainly juice not completely from apple's.

That's based on a gut instinct not experience haha,

As this is only the second thing I've made in more than a 2L batch..

Will 'wild' yeast effect the final outcome too much or have I made an error?

Any advice will be gladly received

Right this batch of cider appears to be ready to bottle.

Started 1.45 on hydrometer
Now at 1.02

Just after a bit of advice before I start to Rack it.

Should I just bottle with as little sediment as possible and then allow to mature and carbonate for a few weeks... Or does anyone have any other suggestions?

Also should I consider using finings or not... If yes, why?
