I found a packet of S-33 today that I don't remember ordering, possibly while drunk.

Anyway, I'd like to put it to good use to make a strong, continental-style ale and I have the following:

I was thinking of making a fairly small batch, 15l or so, with something like the following:

4kg Pale
0.5kg Munich
0.4kg Wheat
0.3kg Cara Red

25g Perle (90m boil)
20g Saaz (10m boil)

This should give it an FG of 1080, EBC of 24 and an IBU of 34.4

I'd really like to add something too give it a distinctive bitter or citrus finish; would juniper berries, herbs or lemon peel work OK?
What do you folks think - any good suggestions from someone who's used this yeast before?

well ive not used the yeast before but i imagine as its for higher abv it will attenuate quite well-also if going for a high abv 454g of golden syrup/dark sugars/honey always helps (saves on the malt), and works in a belgian style thing, both of the above mean u will want to mash v close to 70 degrees

for citrus why not use your cascade hops-lemon peel is probably alot more effort for less flavour? otherwise im sure the spices should work but hopefully the yeast would help with that

Good luck and whatever u do should be awesome

Thanks, I'll add some honey to boost the ABV as well then. I may give the Cascade a miss as I already have a number of ales that have been late-hopped with Cascade and I fancy trying something different.
