Strong Dark Ale recipe. Help Needed.

After the last disaster of spilling 20 liters of hot wort over the garage floor unsurprisingly i have the tell tale signs of mice. Chewed up bags and droppings. Must find time to mop the floor. Decided to use up the attacked bags and do some kind of strong ale. Please feel free to point me in the right direction. Using Apollo for bittering cos of the high AA. Plan on keeping this for the Autumn.

ABV 7.87%
IBU 52.08
SRM 14.56

1.4kg Maris 39.9%
400g Wheat 11.4%
700g Mild 19.9%
500g Munich 14.2%
300g Oat Malt 8.5%
200g crystal 5.7%
10g Chocolate 0.3%

9g Apollo 18.1% @60
30g Fuggles 4% @15
40g Fuggles 4% once cooled to 80c
Goldings Hop sachet at start of fermentation
Dry hop once i get more supplies?

Yeast, as yet undecided

Cool thanks. Will be attempting to do this while cooking Mothers Day Lunch and having a few jars. Fingers crossed i don't make any more mistakes. :)

I can't guarantee how good it will be, but it looks OK,it should be fine, and I like the random beers that you make when you have stuff to use up. Can work out great!

I stuck my hand in the Munich malt and felt something cold and furry. Came as a surprise to say the least. Got 8 liters at 1082 diluted it to 9l 1073.
