Hi all,
I'm new to home brewing so please go easy on a couple rookie questions.
I've started brewing the bulldog evil dog ipa and have a couple of questions about bottling and priming.
1. Is it best to follow instructions which say to add sugar to bottles or should I filter beer to a bottling bucket and mix diluted sugar and bottle this way?
2. What sugar should I use, I've bought some brewing sugar from Wilkinsons?
3. Also bought Wilkinson sterilizer, instructions say to rinse after sterilizing but doesn't this defeat object of sterilizing bottles and caps, any tips?
4. Forgot to rinse fermenting bucket after sterilizing but dip drip dry, will this effect beer?
5. Last question, when I add hops 2 days before bottling can I crash cool at this point if yes does it effect hop aroma?

Apologies for all the questions, hopefully first and last time I will ask these

Thanks
Hep

Hi Hepbrew, Ive not done this kit, but have experimented a bit with dry hopping. To respond briefly:

1. I add priming sugar to each bottle using a small bowl, a teaspoon and a funnel. If you think this is a fag, then by all means batch prime.
2. The type of priming sugar makes no difference at all - so go for the cheapest.
3 & 4. I've never used the Wilko steriliser, but it claims not to leave off taints or flavours. But if it says to rinse, tap water is pretty safe, so no objection to doing so.
5. If the instructions say to dry hop 2 days before bottling, I would suggest crash cooling after the 2 days are up.

Thanks for the response slid, one question regarding the crash cooling. When you say crash cool after the 2 days, how long would you recommend. Would it be a case of leaving in a cool place overnight after the 2 days then bottling or leave for an extra few days before bottling?

Also after crash cooling would you need to bring the temp back up before adding sugar?

Thanks again.

Since the point of crash cooling is to clarify the beer earlier, I would suggest cooling until it is clear. There will be enough yeast for secondary fermentation, but after adding priming sugar and bottling, the beer needs to be in a warm place for the secondary fermentation to occur. The less yeast there is in the beer at priming, the longer this secondary fermentation will take.

I've never crash cooled, because I've never had the technology, but it might be a useful trick

I have a large fridge in the garage and crash cool all beers for corny kegs or if they are lager. I cannot see the point in crashing IPA for bottling or for a pressure barrel. Leave bottled beer in the warm 20 to 24 degrees then in a cool dark place, they'll clear in the month before you drink them. Patience is the key hepbrew.

Thanks guys.
I'll give the crash cooling a miss for this batch, may experiment as I get a bit more knowledgeable.
Hopefully bottling at the weekend which will be 3 weeks in the fermenter. Then be patiente for another 3 or so.
Thanks again.
