The Amarillo is a misprint and they don't dry hop. I've done quite a bit of research see my post earlier in this thread.
 
One of their brewers posted the recipe for azacca hophead on his twitter. You can see it's just an amended version of the original, where they have one cascade addition for 30kg then make up the IBUs to 50 with warrior if needed. Not needed in the azacca version I see



Quite easy to make a recipe for ones own system with that info

https://www.brewuk.co.uk/antifoam.htmlMy Braumeister doesn’t normally boil over, but following a 90 minute mash this week I’m glad I was around, it was about to climb out! As soon as a drop of this stuff hits the surface all the froth magically fizzes away and vanishes for good!
Does the AntiFoam affect the final in-glass brew? I mean, do you still get a decent head? Or do you need extra carbonation?

It lists it main ingredient as polydimethylsiloxane which is found widely in medicines and cosmetics:
https://en.wikipedia.org/wiki/PolydimethylsiloxaneI don’t use it often in the kettle but it always goes into my starters as I find it impossible to boil the wort in an erlenmeyer without it boiling over (I boil the stir bar and causes lots of bubbles). I may consider diluting it in water first as I may be overdosing on it, a little goes a long way.
BTW, the Dark Star brew sheet shows they add it as required too.
 
I believe it also can prevent excess foaming during fermentation. I always use a stir plate but have never even seen krausen in my flask, this may be why.
