Ok so I am new to brewing, got myself a Wilkos rose 6 bottle kit, followed the instructions to the T although I used granulated sugar instead of brewing sugar as I read on the forum that it takes no real difference..

On day 3 I topped up to 4.5 ltrs and the air lock was bubbling every few seconds ... the trouble is it has now come up the neck of the DJ and out the airlock .... running down the side of the bottle ..

why has this happened ? and what should i do :blush:

I've cleaned the bottle and airlock and put it back on the side ... its still bubbling like mad

Sorry if this stupid but I wasn't expecting this... I had plenty of head room as it is filled just past the shoulders of the DJ

I had the same problem with the wilko strawberry kit when i first started wine making the problem is the instructions tell you to top up to 4.5 litres too early and its best to leave it 5 days or when fermentation has died down a lot, you can keep emptying the airlock and replace with a clean one or better make a blow off tube which will save you having the mess in future if things get a bit lively, i use my blow off tube every time when i do a 30 bottle kit in my FV.

Hi

I'm over simplifying but there's a (slow) period when you start fermentation while the yeasties geting established and multiply before the ferment really kicks off. This is likely to be longer if the initial temp of the FV is a little low (<20c ish) or if the oxygen level is low in the must. It could be that when you topped up you increased the level of oxygen or the yeast had just hit their ideal concentration, once yeast start to work the temp will increase so this can start a very vigorous ferment.

I cleaned the air lock and re fitted and its now bubbling every couple of seconds but not coming up in to the neck, i actually wondered if it got a little warm in the posts ion it was but after your replies they make more sense.

I made this kit for my better half; don't be surprised if when you bottle it you think 'yikes, this tastes pants'. I know it says you can drink it straight away, but after 2-3 weeks it really improves, and after a couple of months, its pretty good for plonk that only costs a couple of quid a bottle.
 
With all wines I make I only fill to the DJ shoulder then top up when I rack leaving pleanty of room for degassing.
