I mixed up my first kit on Saturday just gone, but sadly I failed to take an OG reading before leaving to ferment (stupid error, which I don't intend to repeat!). I fitted an aquarium heater with two additional (independent) aquarium thermometers to measure the temperature of the brew which has ranged from 18°C at its lowest to around 21.8°C at its warmest. The beer began to ferment quite vigorously with a good head of foam after approximately 36 hours. Tonight, I have taken my first reading of the SG, which reads 1010, and this is after 5 days! I find this very surprising as I expected it to be around this reading at 2-3 weeks. After this shock of relatively low SG, I checked the SG of plain tap water, which was 994, so I guess that makes the SG of the brew more like 1016?
I'd like to ask your opinions on this brew please gents. The brew appears to be less vigorous now, and I intend to check the SG at the same time over the next two nights to see if it remains constant, but I'd really like to know if this sounds normal for this ale, or if I maybe need to give the brew a bit of a stir in case any sugars have settled (if that's possible?).
