My 7yr old looked at my latest demis this morning - Lidl peach nectar and Lidl pear nectar - and asked if I was making sponge wine. As in sponge cake, not washing sponge. Presumably. And indeed, the yeast crust does look like a not-quite-ready-to-come-out-of-the-oven sponge.
Damn hot today!
 
I was expecting a recipe I now a recipe for a great Sponge Wine here it is.

1st Sponge 2kg of Sugar & 5lb of damsons
then Sponge some yeast, a glass demijohn...................................................

I got the recipe of my neighbor he is one of the best Spongers going, he does a great omelet too

recipe for that is:
1st Sponge 2 eggs...................................... :D
