Done this today:


Spiced ginger beer

200g ginger
2 x lemons (juice and pulp)
1 x orange zest
2 x twinings lemon & ginger teabags
handful of raisins
Pinch of allspice/cinnamon/cayenne pepper
1 tsp ground ginger
350g light muscavado sugar
50g honey
a few swirls of Malina polish syrup
1 tsp Yeast nutrient
1 tsp Yeast
1 tsp cream of tartar
1 tsp glycerine
Water

Sg: 1045 @ 4.5L

Wow that sounds very interesting, it should be quite flavoursome! If fermentation gets very active, that could look so cool, please post a pic :D
 
Thanks will do .. At the moment I'm just worried its gonna be really dry and a pain in the a#rse to rack anyone have a racking idea ? I was thinking of tying some muslin cloth to the end of my siphon hose ?

Yep, that's what I'd do. I'm assuming u know to steralise it first :) tied with a cable tie is easy.
 
Well I was just gonna boil the cloth for 5 or 10 minutes would that work ?

I topped up the pet tonight the fermentation is well under way now :)

I'm not really sure about this recipe but From what I've heard should take between 7-10 days to ferment out then either leave it to bulk condition for around 3 months or bottle and prime straight away then drink after 2 weeks to a month.

This is ready for racking took a reading last night and its at about 0994. I tried a little and tbh it wasn't good, bitter and not enough ginger flavour coming through I'm gonna rack then leave it for a while to condition then back sweeten and add ginger powder.

I've been getting a similar result from a very similar recipe.
Mine has got good fizz after a bit longer in the bottles but it's smelling a bit wrong.
The ginger flavour is sharp and glassy rather than warm, but it has a good bite.

Strength is around 5-6% I guess and it's quite a good brew in many ways.

I prefer a sweeter powder-only brew ---- I have a good method for that, from an old book.
I'll post up a thread with it.
 
I've bottled this now with a heaped teaspoon of Splenda and a flat teaspoon of sugar. Tbh I dunno about this brew maybe its just me but it tastes weird ! Almost like a chemical taste to it :wha: I'm pretty sure I never got any steriliser into it, my dad thinks it tastes fine.. I plan to leave the bottles in the warm for a week the in the cold loft till Christmas if it still tastes bad ill leave it till the summer :lol:

my motto is however bad it tastes, never throw alcohol away :rofl:
