Hi,

I make a lot of beer ( mainly kits, occasionally AG ) and red wine kits ( Beaverdale Barollo), but SWMBO has asked me to see about making a sparkling white.

Are there any kits for this, I know nothing about white wine - would any white taste good with bubbles? I'd ideally like to do one of the smaller kits as an experiment to start off with, but I'm happy to pay a bit more and get something drinkable.

Would white wine be awful if bottle conditioned? Obviously I can't kill off the yeast before bottling. If bottle conditioning, how much sugar ( 1tbsp/pint ? )

I have a few Cornelius kegs - any thoughts on sticking a kit of white in one of those and doing a force carbonation?

Any 6 bottle wine kit will do, but do not use the supplied stabiliser. At its most basic, once the wine is clear, rack it, add a teaspoon of sugar per screwtop bottle and leave for a few weeks, standing upright. If a small layer of sediment has formed, it will be sparkling. Chill and pour carefully to avoid disturbing the sediment. If you want something resembling champagne, it gets a lot more complicated!
