Hi

Im brewing a kit called Scaddam (?) dark from Brupacks. I started on wed last week and the fermentation has stopped at 1019 so im going to give it a stir and see what happens - should i add more yeast now or wait?

I have had the lid on tight with airlock and have now been told that the brew needs some 02 so i have loosened the lid. However, ive heard that leaving the lid tight can cause a sour taste. I had a taste and it tastes a little sour - do you think thats the lid thing or perhaps because its not finished?

Any advice appreciated!!

Ive alwas left the lid on tight with kits and all grain ,wine mi ne nefver ends up sour perhaps it just needs time to ferment out shake it to awaken the yeast then leave it to ferment out

The yeast just needs rousing give it a good stir. The sourness is because it's not fully fermented nor is it matured.
Double check it's temp as well, it needs to be around 18 -20 C and adjust it's suroundings if needed.
