This info would have been invaluable to me a few months ago when I first bought my corny kegs so I thought I'd just share the details about carbonating for those who are new to Cornys. For me, it was trial and error but here's what I've researched and found the best way for my setup.
Once the beer is in the keg and apply 5-10 psi whilst pulling up/locking the lid in place. This helps to close the lid tightly. Release pressure by pulling up the pressure release valve and reapply pressure.
Repeat 2-3 times to purge oxygen.
To quickly force-carbonate, ideally first crash cool to around 2 or 3 degrees celsius if possible. Cooler temperatures help the beer absorb the C02 better. Apply 30 Psi of C02 until you do not hear it flowing anymore. Take off the gas-in connector and shake the corny vigorously for 2-3 minutes or like me, roll it up and down the garden a few times :mrgreen:. Reapply pressure, until the sound Of C02 stops, and shake for another minute. Repeat several times until very little C02 is able to dissolve into the beer.
An easier way to force-carbonate (when not in a rush) is to keep the C02 tank connected for a period of 3-5 days at 30 psi.
When ready to serve, disconnect the C02 cylinder and release most of the pressure from the keg. When beer starts to flow VERY slowly, reapply the C02 at only 3-5 psi-just enough to push the beer out without causing foaming problems.
