I have just done a Simcoe Smash and I am little disappointed with the Simcoe. I used 100g and although the beer is nice and well drinkable it definitely lacks in flavour which is very subdued. How have other people got on with Simcoe and what flavours do they get as mine is just a mild slightly fruity flavour

Hmmm, should work. I've never had great success with dry hopping with whole hops.

Also, do you add the hops straight to the boiler or use a spider / bag?

I use a Spider. I know it is used with other hops like Citra Mosaic and Amarillo but on this tasting I wonder what does it really add and what should it taste like by people that have used it on its own and not what the description says on hop sites

Fair enough :hat:

Guess I'm suggesting that whatever it does really add you won't see the best of it using whole hops in a spider or by dry hopping with whole hops athumb..

I made an all Simcoe IPA a year or so ago and the overwhelming flavour and aroma was passion fruit.

Delicious and one of the best IPA's I've made to date.

Just ordered some Simcoe and Ciara lupulin powder for a pale ale! Maybe a Zombie Dust type clone.

I was thinking of the simcoe more bittering and late - small amount of bittering and 15min then 5 min Simcoe and Citra- and then Citra for hop stand and dry hopping. Hoping it’ll work out tasty!

I love simcoe, one of my favourite hops especially when paired with amarillo. I would say the reason you're not getting a huge hop flavour/aroma is that 100g just isn't enough hops for that. For my hoppy beers I would use at least 100g (and probably a lot more) just for the dry hop.

I've made a great Simcoe IPA. Bittered with Target then nothing 'til flameout, cooled to 80C when I added 50g of Simcoe leaf. I dry hopped with the other 50g 2 or 3 days before bottling. If you want to know what it can taste like go to Marks and Spencers and try a bottle of their Simcoe IPA (brewed by someone else, obviously.) They also do a Mosaic version which is worth a try for research purposes.
A lack of hop flavour can often be attributed to not cooling quickly enough after the boil. Did you do that?
