Been to my local hbs and got a youngs 40 pint harester bitter and a youngs 30 pint stout
and some spray malt.
Question is

How much sugar is needed for the 40 pinter to reach an initial abv of the 4.8 ish mark

In my Cooper's Darks I went for 500g Spraymalt + 750g Sugar and ended up around 4.7%
 
According to my calculations, assuming a yeast attenuation of 73%, 1.1kg of sugar or 1.8 kg of spray malt will give you an ABV of 4.8% for a 1.5kg wet extract kit brewed to 40 pints.

For the 1.5 kg stout kit (30 pints or 3.75 gallon or 17 litres) 1kg of spray malt or 600g of sugar will give you a 4.8% ABV beer. FWIW, with my experience of the Harvest stout kit (two brews, both excellent), I would recommend the spray malt with S04 yeast.
