second run on AG brews

I will do a ag brew this weekend and once finished with, can you do a second run on the mash ?

now i dont mind it being a week beer as i want it to be a malt vinegar experiement base, i was thinking of just buying some malt extract but if i can make use of the grains then i will,
 
if you have mashed then fly sparged there won't be any sugars left infact you may just be releasing tannins which ain't good
 
The other way would be to double your grain bill if your mash tun is big enough, sparge then take a sample of wort if its still high in sugars you could sparge again
 
Brewers of yesteryear brewed this way making their first brew from first running's, don't think they sparged, then a second mash made their "small beer" hence the saying.
