SECOND FERMENTATION NEED HELP PLEASE?

iv,e just transferred my coopers English bitter into keg and added 5 ounces of sugar for secondary fermentation, I'm sure the bloke in the home brew shop said it,s alright to drink after about 3 days but I'm not to sure, all advice greatly appreciated. also what temp should it be kept at when finished or is that a personal choice. cheers. :wha:
 
Leave it for at least a week in the warm, then move the keg to a suitable location where it will stay reasonable cool.

About 12 centigrade is about right for Ale.

The longer you leave it the better it will be, ideally leave it for 3 - 4 weeks, after 8 weeks it will be better though.

Silly question, but apart from a cellar, where else will be a constant 12C? Parts of our house drop considerably at night time but then rise to a normal 19-20C during the day, especially during winter: what effect would this have on ale?
 
It's not essential to keep it at 12 degrees, it's just the preferred drinking temperature.

Dependant on space you could get a fridge to keep your kegs in, and override the thermostat so it maintains a constant temp for you.

Was that a hit & run on Waitrose when they were on offer?
p.s. like the fridge a lot! (I wanted to put cool fridge but that would have been silly :cool: )

Actually I got them and a case of Italia from myBreweryTap, they were on offer as they go out of date soon.

I have to be honest I'm not over impressed by either of them. I'm finding that with a lot of commercial beer though, it all seems to lack flavour compared to what I brew myself.

It's likely that either you are just brewing hoptastic brews or that the Thornbridge beers were past their fresh-hoppy best... probably a bit of both ;)
