Hi,

I have the unfortunate task of disposing of 30 litres or so of phenolic beer tonight.
The new mash tun I ordered from muddydisco has arrived (lovely thing she is too :clap: ), so I will be up bright and early to do a double brew day in the hope of producing 50 litres of something nice.

I am fancying a nice pale with a bit of munich, hopped with chinook and maybe some cascades if they arrive in time. Might go all cascade, might go all chinook :rofl:

I've got 36 litres of pale bitter in secondaries, so I think the second brew might be a stout, or another bitter if the hop delivery comes through.

First mash will be on at about 7am, so I'll dough-in and then walk my faithful mutts.
Back to start sparging by 9.30 or so, and once that is in the boiler I want to put a second mash straight on.

Recipes to follow tonight.

Anyone who wants to come along for a look-see-do, chin wag, bacon sandwich etc would be more than welcome....please drop me a PM.

nice, I would go chinook for the whole boil and cascade later :thumb:

Here is the first one.....no name yet. Want something light and refreshing, just worried it might be a bit thin. We'll see I suppose.

For 25 litres at 4.1% ABV, yeast will be Nottingham Ale
3.70 kg Pale Malt, Maris Otter (3.0 SRM) Grain 82.22 %
0.50 kg Lager Malt (2.0 SRM) Grain 11.11 %
0.30 kg Flaked Maize (3.0 SRM) Grain 6.67 %
15.00 gm Chinook [11.40 %] (90 min) Hops 19.2 IBU
10.00 gm Cascade [5.50 %] (90 min) Hops 5.6 IBU
25.00 gm Cascade [5.50 %] (15 min) Hops 6.4 IBU
20.00 gm Cascade [5.50 %] (5 min) Hops 2.1 IBU
15.00 gm Cascade [5.50 %] (1 min) Hops 0.3 IBU

Second brew ended up being a stout....a variation on Coopers Best Extra Stout, got about 30 mins of the boil left as I type.

For 35 litres at approx 6% abv, 46.1 IBU
7.06 kg Pale Malt, Maris Otter (3.0 SRM) Grain 76.74 %
0.70 kg Chocolate Malt (450.0 SRM) Grain 7.57 %
0.70 kg Roasted Barley (300.0 SRM) Grain 7.57 %
0.29 kg Caramel/Crystal Malt -120L (120.0 SRM) Grain 3.11 %
50.00 gm Galena [12.90 %] (90 min) Hops 40.8 IBU
30.00 gm Styrian Goldings [5.40 %] (15 min) Hops 5.3 IBU
0.46 kg Dememera Sugar (2.0 SRM) Sugar 5.02 %
2 Pkgs SafAle English Ale (DCL Yeast #S-04) Yeast-Ale

Yes it was quite a long day in the end....I just plodded through, no rush.

First bre I ended up calling Wasp 59 Bitter, as a wasp flew straight in the boil on 59 mins - he didn't stand a chance :shock:

Couple of pictures of my new hlt courtesy of muddys custom build. PID to keep the temp where I want it, nice sight glass too. This will save me an hour per brew day as I can set it on a timer - 3kw element :D

Grain bill for the Wasp....mash on.
Mashed this at 66 degrees, but had lost a very unusual 4 degress at mash out.
I came the the thinking that it was a very small mash volume in a large vessel - going to make an inner lid from Kingspan to help keep small mashes snug.

Sparging through the Wasp

I ended up way short on this after the boil.....only 17.5 litres at 1042 :shock:
I liquored back to 21.5 litres at 1040. Not really sure at all why I was so short.

Also had a bot of problem with the new mash tun - couldn't get the run off from the mash to clear....even after running 6 litres back to the mash from jugs. Luckily; what came through floated, so I scooped them off with a sieve before the boil :pray:
 
Mash on, 67 degrees this one.....was a much bigger mash and held it's temperature well this time. 1 degree lost in 2 hrs (had to go to shop).

Still had a few problems wit bits comming through on the sparge, but not as bad as during the Wasp....scooped 'em off again.
