I'm just drinking (I know!) my last bottle of a batch of this beer I bottled in December 2013. I was expecting not much after 20 months but, bloody hell, it's FANTASTIC! Even better than earlier. Smooth and rich, a deep dark red colour, and the Chinook and Columbus hops really cut through the rich malt and add to the flavour.

Here's the recipe, named after a Tom Waits song I like a lot! Apollo hops would also be a good choice in place of either of the Columbus, they are quite similar hops, I think. You could use any one of Columbus, Chinook or Apollo in this beer on its own I reckon if you wanted to simplify the hops and keep the cost down. I'm not sure how much the Brewer's gold contributed.

You could also simplify the grains by leaving out the amber malt, torrified wheat and oats. It has a very fine soft head that lingers though, the oats must've played a part.

0.050 kg Torrified Wheat (2.07%)
0.030 kg Black Malt or Roast Barley (1.24%)

10.0 g Columbus Leaf (17.1% Alpha) @ 60 Minutes
10.0 g Chinook Leaf (12.5% Alpha) @ 30 Minutes
10.0 g Brewers Gold Leaf (6.9% Alpha) @ 15 Minutes
10.0 g Chinook Leaf (12.5% Alpha) @ 0 Minutes
10.0 g Columbus Leaf (17.1% Alpha) @ 0 Minutes

Mash at 67°C for 60 Minutes.
Ferment at 20°C with Safale US-05
