Hi guys, so I've made the munich helles from james Morton's "brew" book. Only difference is I halved the recipe as i only wanted a 10 litre batch.
His projected OG is 1.046 to 1.048, but my original gravity was 1.060. I'm presuming i got a higher OG as i milled my own grain and did it very fine. My question is though will saflager s-23 be ok with a higher OG ? I pitched a whole packet for the 10 litres and are fermenting it at 15 degrees. It took about 36 hours for the first bubbles to start coming from the airlock.

It'll be fine.

As an aside, S-23 is a bit of a love/hate-it yeast, some people really don't get on with it and others love it. If you're fermenting at 15C then next time you might want to try Mangrove Jack M54 California or Fermentis 34/70, people seem to generally get on better with those at what is a relatively high temperature for lager yeast.
 
As a genetic sister to the Urquell 'H' strain (or at least to WY2001), S-23 should be fermented cold. I've heard that Pilsner Urquell is fermented at a fractional smidge below 8 C. I wouldn't advise going that low, but S-23 is probably best if kept at ~10 C.
 
I've just bottled a pilsner a week ago done with s23..it seemed to go without issues,sample jar was very promising and looking at the bottles carbonating in my cupboard,it's dropped clear already. It'll have another week then be put in the shed.
