S-04 vs US-05

Just finished a citra pale ale and filled 3 fermenters

Used US-05 in 2, S-04 in the other

Started at 1048, the US-05 finished at 1006, S-04 at 1011

is it normal this difference in attenuation?

This is AG17 dont think ive ever had one finish less than 1010 before, think mash was at usual temp of 66degrees

Think its gonna taste like alcoholic Citra water! which cant be a bad thing!

Yes it's entirely normal, and those are the SGs i'd expect to see at bottling. Don't worry too much about the output, US05 is an excellent yeast. It also harvests very well; I'm just fermenting a second American Pale with a washed yeast slurry from my previous APA.

I'll be very interested to hear your tasting feedback of the two ales?
 
just trying the S-04 now but its only been kegged for 2 days, so still sweet...

used about 100 grams Citra per 40 pints, and IBU of about 60 so will probably be quite bitter once priming sugar eaten up

the S-04s just come out of the fridge to drop the krausen, so will keg that up in a bit
 
well gave 1 keg away to a friend the s-04. Drank the other us-05 , which was tasting a bit rank in the pressure barrel towards the end

bottled 40 of us-05 also , which were very nice got better and better until then ran out, becomming really citra flavoured and just fizzy enough towards then end

been round my mates and tried some of the pressure barreled s-04 and its really quite nice also, bit more body and more creamy taste

difficult to choose, both nice!

yes I know need to wait longer!!! :whistle:

gonna get 25kg of grain and do 2 back to back brews over a weekend, should make 240 pints, need to build up a stock :drunk:
 
US05 is an animal of a yeast (good and bad) though IME it's cleaner (taste) than S04 in that it really lets the hops come though. If only 05 cleared for me as well as 04 :roll:
