Hi I have four gallons of Rhubarb wine fermenting in utility room been bubbling away for a week now reading started at 1092 todays reading on Hydrometer is 1010 should I rack it into 1 gallon demijohns with airlock, add campden tablets or not, new to wine making as you can gather. Help appreciated
 
Yes rack into DJs now and continue fermenting under airlock, no campden tab is needed at this stage.
 
Thanks for that Wurzle will I need to use camden tablets at all or just keep racking, had a small sip when I took the reading tastes good, would you add tsp sugar at bottling stage.
 
You will need to add a campden tab per gallon at some stage as it protects the wine from infection and oxidation.

Don't know what style of wine you are aiming at but if not a dry then you will need to add potassium sorbate at the same time as the campden tab to prevent it re-fermenting.

If the wine tastes fine to you now then go ahead and rack and add campden and PS to stop it.

Think I would continue the fermentation and back sweeten it latter if it is not sweet enough for you (1.010 is quite sweet) ;)
