I posted a mistaken hydrometer reading last night for which I apologise.
I made a 30 bottle Punch Nebiolo kit last friday 5th June with an OG of 1080...today 9 days later is is between 996/7 which I think is approx 11%.
Stage 2 tells me now to rack into another FV add stabaliser and finings A..then shake to remove co2 repeating several times before adding fining b hen leaving to clear in 24/48 hours.
Id like to know if its recommended I rack at this stage or leave it for longer before doing this..whats the general opinion about racking as quickly as this will it have any effect on the taste etc.
