the Mrs had 1.5kg of red currents and 1.5kg of black currents in the freezer that had to go to make room, so.........

1.5kg red currents
1.5kg black currents
2 crushed c/t tablets
6 pints boiling water

Water added to fruit to thaw then brought back to the boil and fruit crushed with tattie masher. left covered for approx. 24 hrs

3.5kg sugar dissolved in 6 pints water
1 ltr red grape juice
1 lemon
1 cup strong tea
2 tsp pectalose
2 tsp nutrient
3 tsp yeast
2 pint cold water

fruit strained into fv, all ingredients added and stirred well, 2 pints cold water added to drop temp. yeast pitched at 26c.
OG = 1.114

this is my first time at a "proper" wine from scratch so who knows? wish me luck.
 
and she's off.

Fermentation has started and it smells awesome.
 
4 days on and fermentation is strong, so strong it keeps blowing the water out of the bubbler, had to top it up twice now.
Temp has been at a steady 19c.
