Just finished my first brew - St Peters Golden Ale and it tastes good so far, however i think i added a bit too much sugar as it is very well carbonated, almost like a lager.

I am very pleased with how it has gone, I do have a bit of sediment in the bottom of the bottles though, does anyone know what might have caused this.

Anyway as it went so well I am thinking of starting my next one straight away, does anyone have any recommendations about what kits to try next, looking for an ale, not too dark but maybe a bit more intense than the golden ale.

thanks

The sediment is settled down yeast, so it's normal and you can't really avoid it if you bottle your beer. My first brew was St Peters Golden Ale too and I had some sourish smell to it, I guess it's because my fermentatiin temps were too high, but it tasted alright.

You will always get some sediment as this is the yeast which has carbonated your beer, however it can also be the yeast which was in suspension before you bottled. I always say have your beer as clear as you want to drink it before you bottle and it will be as clear as that when you come to drink it. also it takes time for the yeast to compact down in the bottle usually about 4-6 weeks, after this time most of it will stay stuck to the bottom of the bottle (if you pour carefully) :thumb:

yup
primary to secondary to bottling bucket to bottle getting clear as possible in the first place is the way to go
