does anyone have a good recipe for a hooch style drink. i want to make a lemon fizzy alcopop but cant find a recipe anywhere. has anyone got one they have tried?

also i want to make an eldeflower champane but i think i might be a bit late for picking my own eldeflowers. i have only used kits so far as i have only made two batches of cider and about 6 kits of wine making 6 bottles each. so not totally sure i want to make the lunge of picking my own ingerdients yet. so what i want to know is can i make a champagne from a kit such as a solomun grundy or youngs. if so how would i make it fizzy.

i have made to batches of fizzy cider but dont understand how i made them fizzy and the wine not fizzy.

anyone with any help or guidance will be much appreciated.

Hi I made elderflower champs yesterday, although admittedly i had very few brilliant white flowers to choose from.

i used this recipe....

2.5 litres hot water
2 litres cold water
700g granulated sugar
Juice and zest of 2 lemons plus 2 tsp of citric acid ( i ran out of lemons 1tsp per lemon)
2 tblsp white wine vinegar
about a pint of elderflower heads stripped from the branch.

i used the bin bag trick to get the flowers off. Put the flowers and stems in a bin bag fill with air and leave for 24hrs. Shake bag vigorously and the flowers should come off the stems.

I had to make it in a DJ as my fermenting bucket has raisin and rice wine in it.

I also had to add yeast as it failed to kick off. i think its coz i put the flowers in the fridge till i was ready and so killed the yeast? Who knows?
