Recipe required please

I was hoping to follow Brewstew's recipe for Rauchbier this weekend, but when I went to my first local HBS in the proprietor said he had never heard ever of Rauch Malt!
Visited my local HBS in North Birmingham and the guys there knew what I was after straight away but the Rauch malt has a short shelf life due to the smoking process I guess and therefore is special order.

As a sort of stop gap I purchased the following in the hope of making something:

4.68kg crushed pale malt
0.5kg crushed black malt
0.5kg choc malt
130gm Hallertauer hops
Safeale S-04
Irish Moss

Question is how best can I use these ingredients or do I need to add to them?

Any suggestioins gratefully recieved
 
I'd go with a stout or a porter with those ingredients, but you would probably want to only use half of your chocolate and black malts (probably less). Nothing else needed to add really.
 
Hadn't thought of a porter not sure if I wan't to stray that far. What would you suggest I add to come up with a pale ale?

Sorry, just got home.

I would suggest 5% crystal malt, 5% caramel malt
