Hi all,
I've finally sourced some champagne bottles and was thinking of making 2 gallon of water melon champagne.
Recipe (per gallon);
2l watermelon juice
500g sultanas
1 small tin white grape concentrate
enough sugar to reach 1070 OG
yeast etc
The 1070 OG should reach about ten % then id leave it 6 months to naturally clear and kill yeast then pitch more sugar and new yeast before bottling to increase alcohol to around 12% and create the fizz.
Any ideas? Does that sound okay?
One recipe i found online suggested adding white wine vinegar does anyone know why or what that would do??
