Use the Muntons, with 25% Vienna. I'd be tempted to use 35g of Apollo at 60 mins, 15g at 10 mins, 15g Saaz at 10 mins, 35g Saaz at 0 mins. 50g Saaz dry hop. Not saying it will work, but that's what I'd do
