Slowly getting equipment together and starting to look at recipes. I was thinking of doing a Rauchbier to start with but Grays has persuaded me that a Stout is more forgiving on a first brew...
So I've been looking thro Wheelers book and like the sound of Batemans Salem Porter.
I've also been playing with the software BrewMate and I know its not universally liked but its one I've been looking at and trying to get me head round....
But I'm lost... the recipe calls for 455gms of white sugar, how do I add that in the software their appears to be no facility for it. As a result the %abv comes out around 3.05 according to Wheeler it should be 5.2.
Also when do you add sugar.... with the rest of the grain bill before mash or during the boil ?

Hi Mate,

I usually add sugar at some point in the last half hour of the boil. As long as it goes in when things are hot it will be pastuerised and dissolve.

As for your choice of recipe, I have never done a stout. My first AG was a very simple pale ale with 3.5kg pale malt and 200g (ish) crystal. You could even just use a single hop for this. However, it all depends on your tastes.

You can add sugar in Brewmate, it's right there in the Grains list...you have:

Brown Sugar Light
Brown Sugar Dark
Candi Sugar (amber, clear or dark)
Cane Sugar
Corn Sugar
Dextrose

standard table sugar would be put in as cane sugar, strictly speaking if yours is Tate & Lyle then it's cane, if it's Silver Spoon it's beet. It won't make any difference though, just put it in as cane. I'd add the sugar about 10-15 mins from the end of the boil.
