Received some yeast from a brewery

The Hogs Back brewery were kind enough to give me some of their yeast today and I'm just wondering how to go about storing it? They gave it to me in a bag and I have currently got it in the fridge. Do I need to store it under water or make a starter and store it under that? Would it be a good idea to buy a Hogs Back beer and store it under a bit of that? Also, how long is it advisable to keep it for before brewing? I've read the stuff about harvesting from bottle conditioned ales but not found anything about receiving the yeast directly like this.

The bag (if new) will be sterile from production so leave the yeast in that.

Make beer (soon) . . . Add Yeast . . . Stand well Back :whistle: :whistle: :whistle:
 
Thanks very much for the advice, I thought I'd already posted to let you know that I appreciated it!

I made a starter a couple of days ago and pitched the yeast today, looks to be doing very well too :)

I'm heading to my parents for a fortnight now so hopefully it'll be about ready to bottle when I get back.
