hi brewers

I've got a ruby red real ale & I want add raspberry I'm thinking of boiling 1kg of berries then straining the juice & adding it to the wort before pitching the yeast


is this a good idea :party:
 
could do though don't know how much taste will survive fermentation , but heck experiement is the spice of life

after wot u said I'm thinking of adding the juice in the secondary stage of fermentation after say a week or maybe add it with the priming sugar before bottling any comments would be welcome

If you are adding it when bottling I wouldnt add any sugar as you will have all the sugar from the raspberry's which might work very well to add flavour and carbonate your beer? Dont quote me on that though, it makes sense in my mind :lol:

I'm going to use frozen raspberries so will check the sugar content first
to see if there will be enough to carbonate if not I could always add a bit to suit :cheers:

its all about experimenting hopefully this will turn out nice & we can try different fruits although I think someone must have tried this before but for some reason apart from a couple of master brewers & i thank them for there very helpfull input there doesn't seem much interest shame cos when I tasted raspberrry real ale in a pub in Canterbury who brew there own it was fabulous hense why I want to brew it will let u know how it goes

Hmm, think I mit have to take the wife to Canterbury, if I can get her thinking rasberry rather than cherry (and rasberry has been done) it might make life a little simpler for me :D
 
I do an elderberry Stout. I add 250g per gallon of elderberries well the pressed juice. I add it to the last 10 mins of the boil as I want to ferment it so I get the port like qualities of the fruit. However raspberrys are very delicate so as sugested i would put them in at the end and treat like dry hopping for taste and aroma. Darker the fruit the more sugar it has and the more robust the flavour so dark fruits are best fermented and will probably stand up to dark beers but again raspberries are probably better of in a lighter beer, and one which won't be dominated by the hops i would have thought. :thumb:

ok my ales been fermenting now for 10 days its been in the secondary fv for last 2 days I'm looking to bottle on Saturday I have 1.5 kg of raspberries which I intend to boil with a cup of water then strain through a fine sieve add to a clean fv & batch prime with 100g of sugar final volume will be 21 ltrs

does this sound about right :cheers:
 
I would prime at a rate of 4g per L as there will be some residual sugar in the raspberries. I tend now to carbonate at that rate anyway. :thumb: :thumb:

the sugar content in the raspberries is only 0.3 g per 100g which works out at only 4.5g in 1.5kg of berries but will take ur advice & go with 80g of priming sugar

hi brewers

well after a few weeks in the bottle decided to give one or three a taste
first impression was how good it looked had a nice head which clung to the glass all the way down and wot a great tasting beer made with St peters ruby red two can + 500g of spray malt batch primed with 1.5kg of boiled raspberries will be doing this again very soon :cheers:
