I have my wow fully fermented out, and have let it sit for just over a week. It's begging to clear, the top half of the DJ is pretty translucent, how do I know that the yeasties have cleaned up all the nasties they left behind whilst fermenting and when to rack it?
 
You don't know it's a bit of guesswork. But once it's finished fermenting a couple of weeks is fine. You can rack it at that point and stabilise. Or you can leave it alone for a few more weeks to clear a bit more.
 
I have often wondered this. If it has been fermenting for a couple of weeks and clearing for another couple of weeks what would be the difference from a 7 day wine kit.
 
The way i do it is once fermentation has slowed to around a bubble every couple of minutes leave it another 7 days then rack onto a crushed campden tab, degas, stabilise and clear.

Just before Christmas I finished a Raspberry/apple WOW at 995 and only gave it 4 days to clear up as i was short on stock, it tasted as good as others i have made and i didn't get any side effects by not letting it have the full 7 days, i have now gone back to the 7 day period as i am in no rush.
