Hello all
Just decided on a brew day as plans scuppered....
Wanting to brew another witbier from the GH with Curacao and coriander ..recipe calls for saaz as a single bittering addition...only got some Apollo and magnum...plus a load of cascade, Amarillo.

use Magnum as a neutral bittering hop just adjust the amount to give the same IBU's ( even move the bittering addition to further down than 60 mins if you need to adjust the IBU's)then use your fave hop for flavour/aroma
 
I would use the Magnum as a single addition for the bittering and then build the hop profile from what you have got. The amarillo will give a ctirus/orange flavour so should compliment the Curacao and coriander maybe some cascade to go with it. You've got a good selection of hops to make a citrus tangy Witbier Good Luck Clint
 
@Clint - when I first did the GH Witbier I found the orange peel a bit much.

Second time round I left out the coriander and orange peel and just late hopped with a load of first gold. It's really good but does need something more - in hindsight I'd maybe use about half the amount of orange peel suggested by GH.

I've also recently done an american wheat using simcoe, citra and amarillo which is nice - the american wheat yeast reminds me of a German Weizen yeast and sort of damps down the hoppiness, I imagine a Belgian wheat yeast might do something similar.
 
Funny really...I've done it once before but thought it needed more!! I've only got the recommended amount to go with though....it won't go to waste!

(Can't help wondering how these additions came about though - I mean, a couple of hundred years ago how come your average Belgian peasant farmer just happened to have a shedload of coriander seed and dried orange peel knocking about. Perhaps the oranges migrated or were carried there by a swallow etc. etc. etc. insert Python sketch here..... wink...)
