Anyone got a nice easy recipe for making a prune wine, I could do with idiot proof instructions. I'm also looking for a dry ish wine not a port recipe if possible. Thanks guys. Tom

Never been tempted myself, but...

CJJB says:
1gallon, sweet (for dry, just use less sugar - say a kilo, maybe 2.5lb)
2lb prunes + gallon water + pectolase, in a bucket for a week, stir&mash daily
Strain onto 3.25lb sugar, 0.25pint white grape concentrate, crushed Campden
Add yeast&nutrient, leave 10 days
Strain into fermenting vessel, wait until it clears (2 months +)

Alaskan Bootlegger says:
1 US gallon
3lb prunes, chopped, + Campden, soaked 2 to 4 days in 6 pints water
Dissolve 2lb sugar in 2 pints boiling water, allow to cool
Combine liquids, pitch yeast
Doesn't actually say you remove the prunes....Has them in a bag...
