Hi all
I've had problems with my last two brews - well last one and a half. The brew last month developed a very thick floating mass on the beer in the primary fermentation, smelled 'bready', even tasted a little bready, it also didn't drop clear. It was almost drinkable right up to the time I bottled it.. I went ahead and bottled it anyway - 'just to see'. After a couple of weeks in the bottle it was revolting.

I'm scrupulously clean - well, my procedures are so it was (probably) down to wild yeast or a bad S-04. Having mentioned this to others on another forum, 4 others have had a similar problem recently also using S-04, and Barnsley Brewer has here too.

This last brew (last Tuesday) I split - one half using a new boiler, new FV and new fermentation lock. One half I used Nottingham, the other S-04. Today I racked into secondary. The Nottingham is fine... the S-04 however is showing signs of being like the last brew. There are differences however: It actually tastes pretty good, does not smell or taste 'bready' and has begun to drop clear - not as clear as it should be however.

Now .. has anyone else had problems with S-04 in the past couple of months? I've eliminated most other possible causes - well made a pretty good attempt to. I suppose it could still be wild yeast but seems odd that 5 others have had issues. I've emailed DCL Yeast to ask, not sure what they'll make of my question!

I just used it for my draught stout last week and it has been fine. Performed as it usually does for me.
