Just a quick question or, rather, reassurance required.
It's now 14 days since my kit went onto the FV and it has still not hit the required 1014 on the Hydrometer. In fact, it's not even got to 1020.
However, the temp is still around 20 degrees and over the past three days the OG has dropped from 1025 to 1022.
I'm jumping to the conclusion that the yeast might have gone on holiday or had a bit of a nap but has now returned to work as there are still occasional bubbles coming through the airlock.
As I'm off to Central Europe tomorrow for three days I have the choice of kegging tomorrow morning or leaving it until Monday. As its still moving, I'm inclined to leave it until Monday to see if it drops below 1020, if it hasn't by then I don't expect it to go any lower - on the basis that its had long enough and presumably its just being stubborn.
So... is it acceptable to leave beer in primary fermentation for 18 days before kegging?
