I stated breing in April and seem to be getting on well with Ale's, no probs. But I have made two Porter's and I am getting high FGs. the first I made back in May , and it was a hot weekend, and the fermentation only lasted 24 hours. So I put the high FG down to that. However, I have just made a Porter using T58 yeast. OG was 1.059, but when I racked to secondary after 1 week it was only 1.026. Any ideas? Should I add two packets of yeast for Porters, do they need more?? Or, it is just a slower fermentation and hopefully I will have a lower FG when I bottle.
 
how do you repitch, is that just a matter of getting some more yeast and adding to the secondary? Can you do that, I'm dry hopping as well? Does it have to be the same yeast strain as I don't have anymore T58, but I do have some US-05.
 
mid 20's is way too high to bottle, chances are it hasn't finished. keep it in the primary, stir up the trub at the bottom and see if it takes off again. if it hasn't worked by the next day, it probably hasn't.

if not, add the yeast to the primary. all being well it should start up again. you might wanna feed the yeast with 50g sugar/dry malt extract in a sterilized bowl before adding it into your brew - that'll give it a good chance of survival.

you can use us-05 no problem, but i think T58 is geared towards wheat beers, in which case you'd want to use a wheat yeast if possible for the banana/clove flavour.

you don't wanna add it into the secondary, as you want fermentation to be over for dry hopping :thumb: get the FG down first and then look at transferring to secondary and dry hopping.

Thanks for the info, looks like I have made a mistake by already transfering to secondary and adding hops for dry hopping!

I suppose I'll just have to wait now and see what the FG is in another couple of weeks.
