Hi all, I brewed a pomegranate wow over 6 weeks ago and it's still giving me an air bubble every 30 secs or so and there are lots of small bubbles being produced At the top of my brew. I have tested the gravity and it's 1002.
Will I be ok to proceed with racking then bottling etc or should I leave it alone to finish all signs of activity ?

Also I have a strawberry ribena wine that that i started 8 weeks ago. Its bubbling away but the hydrometer seems to indicate there has been ver little action.

Would it be best poured down the sink and try again?

i gave up with my ribena wine as even after 3 months its hardly moved so I added it to a load of vodka ......
 
Hi Bert, with the WOW-type, are you happy with a medium wine or would you like it to go a bit drier?

Rack it with Campden tablet and stabiliser now if it's not too sweet for your tastes, or try to move it to somewhere slightly warmer and leave it alone for another month.


I gave up on cordial wines a long time ago. I sometimes use the preservative-free Polish syrups, but add them to an active fermentation later in the process.
 
I made a blackberry and elderberry wine last month, and while the fermentation
Was going like a train, added a quarter bottle of polish black currant cordial.
It fermented out to 995 and taste relish now before maturing.
 
I have made gallons of pomegranate wine and have found it does take longer than orange or apple based wow, I usually stabilise 14 days after I start it and have never had one that was not nice to drink.

I also gave up on ribena wines, boiling does not get rid of all the preservatives so it always takes ages to ferment and usually stops early leaving you with sweet wine with hardly any alcohol.

What would be causing the gas bubbles that are still rising in my dj ?
 
It hasn't finished fermenting, if you let it finish it will get down to 990 and will be really dry, you could stop it now depending on what type of wine you like, you will also have to leave it a week after stabilising before you bottle/drink it.

This is from the WOW guide.

For a guide, 0.990 is dry, 0.995 is medium-dry, 1.000 is medium, 1.005 is medium-sweet and 1.010 is sweet.
