plum wine - advice on first attempt

Hi all, i am on my frist ever attempt of plum wine and checking we are doing everything okay.
We de-stoned the plums and put them into a fementation bucket with hot water / prectolose - stirring twice for 2-4 days.
strained then added sugar, yeast and put it into a demi john with a air lock.

Is this right?

Some people say to add citric acid with the yeast? is it worth it?
How long should i leave it in the demi john before racking into another demi john to clear and then bottle.

Any advice welcome.
