I'm going to give a plum porter a go and I've come up with this to get rid of some old malt thats lingering in the cupboard.
Grain Bill
3.8KG Maris Otter Pale
0.5KG Munich Dark
0.25KG Carafa Special 1
0.2KG Chocolate Malt
0.1KG Special B
0.2KG Torrefied Wheat
Hop Additions
15g Admiral @ 60 Mins
25g Bramling Cross @ 10 mins
25g Bramling Cross - Hop Stand @ 80c for 15 mins
Yeast
CML Nottingham
Other Additions
1.5kg Stewed Plums @ 10 Mins
1.5kg -Defrosted Plums - Secondary Fermentation
I am planning to stew the plums with a bit of orange zest and cinnamon for 10-15 mins before dumping into the kettle for the last 10 mins of the boil and after a week in primary transfer it to the frozen plums in a new bucket for another week or so.
Has anyone done a plum porter with fresh plums?
is 3kg enough to flavour the beer or do I need more in the Secondary?
Do I need to stew the plums for secondary or will freezing them be enough?
