Hi guys I've recently brewed my first kit the St. Peter's ipa and it's now bottle conditioning, I made a silly mistake when putting the water in. Instead of topping up to 19 litres I put 19 litres of col water in, they brew has almost cleared now and I decided to take a cheeky taste, it doesn't taste bad but it has a chemically/alcoholly aftertaste, I'm now worried I've ruined my batch. Will this go after its conditioned longer? What could of caused this?

Thanks
Ben

The water addition shouldn't ruin the brew, just make a bit thinner and weaker.

You can get a slight chemical/alchohol taste from bottled beers if you try them too early i.e. before secondary ferment is finished. May be a case of leaving them a bit longer.

The chemically/alcoholly aftertaste will condition out to a certain extent although all kits have a certain homebrew 'twang'.

Just make it a learning experience, drink the result and move on with your next brew.

If you want to make beer without the 'twang', you'll have to move on to all grain brewing. See here for a simple overview:

Clibit should be along in a minute.
