Pitching onto the Yeast Cake

I'm planning to make a dopplebock with a high OG, over 1.100. I can imagine the type of starter needed for that will take a long time to build and be huge which is pretty inconvenient. Would it work to make a regular lager, then pitch onto the yeast cake?

As I usually output the beer from my counterflow chiller into the FV, then shake the FV for a minute to oxygenate, then pitch the yeast, is it wise to do this when the yeast is already in the FV or would it be better to get the yeast out of the FV, pour the beer in,shake, then pitch the yeast?
