Any thoughts on the CML Atlantic yeast, pilgrim?

I thought it worked very well in this one. It was/is a nice clean beer, attenuated well and finished nice and clear. Having said that I've used it for something else (had a look but can't find what now) and it didn't end up so good. Other variables could have been at fault though. 👍

Cheers. So it worked with the First Gold bitter.

You used it in a golden ale with Tropical England mix I believe...

So the other week at homebrew club I got given the onerous task of brewing an international lager, examples of which include Heineken and Birra Moretti. This is not what I went into home brewing for. 🤣

So... I've decided to cheat a little and go for an international amber lager.... for this I've again gone for a bit of a user upper on the malt front

2kg pilsner
1.5 pale
1.5 lager
200g amber
40g black

I've not decided on hop amounts yet but I'm going to bitter with a touch of magnum and throw in a new one for me, ih033, got this on the random pack for 3 quid deal. This is the description

An addictive finish of lemon/lime zest, fresh melon, sweet hay and wildflowers, all capped by a cinnamon spice that cleanses your palate and lures you back for more

Which sounds good to me, may add some at 10, flameout and dry hop with 60g or something.
 
Righto, an attempt at an Imperial Stout....

Going for 10l in the FV, Full volume no sparge.

2.5 kg Pale
1.25 kg Pilsner
500g Oats
300g Choc
250g Mucich
200g Roast Barley
175g Caramunich 2
125g Special B
50g Brown
50g Cafe

Mashed for 2 hours in 20l of tap water at 68c. Bag out and squeezed like hell, unsure if amount in kettle is right so sparged with 2l of boiled water at 75c.

In the boil, 60g Target for bittering at 60 mins.

125g Malt extract
125g Brown Sugar
300g Cane Sugar @15

Cooled and chucked in the FV, in the event I probably didnt need to sparge as I was a little over 10l.

Also..... forgot that 10l cools much quicker than 20 so the temp in the FV is around 20 rather than the 30 I wanted for the Kveik yeast.

Anyway.... OG 1092, smells roasty, looks a bit browner than I thought it might but that might change. Lets see how it turns out!

Finally got round to bottling this puppy, finished at 1020, making it 9.5%. Like engine oil, quite harsh but lots of coffee in there, could be a beauty.

So in the end I went with a 30 min boil, 15g magnum @30, 20g of IH033 @ 10 and 20g @flameout. I will dry hop with 60g probably at day 7 or so... I will use Saflager 34/70, however I came in well up with my OG 1062! This might have something to do with me not sparging with the usual amount.... so added 2 litres of boiled water and it hasn't cooled yet. So in the end, OG 1052!
 
Another brew yesterday...

This time an IPA using some different hops. I went with a tried and tested grain bill of

5kg pale
250 caragold
250 carapils.

Mashed at 66 for 90 mins.

Boiled for 40 mins.

Magnum 30g @30
Zappa 30g @5
Kohatu 30g @5

To dry hop.....140g mix of both the last 2.

Yeast cml 5. Couldn't be bothered to work out ibu, but it'll be at the high end of ipa territory, wort was straw coloured and nice and clear. OG 1052.

I threw in the hops loose, and cold crashed but there was still quite a lot of debris floating about so unfortunately some of the bottles got a lot of pick up. Hopefully will settle in bottle.

Tastewise, quite happy with it, i'd probably say I detected a bit of melon but not much else. I don't think it'll be flying off my beer shelf but it'll get drunk.
 
Going again with my tried and tested Ernest and Bramling X pale. Slight switcheroo with the hop this time round.

25g challenger @30
10g of Ernest & Bramling X @10
25g of Ernest & Bramling X @5

Plan is to dry hop the rest in a couple of days.

Pitched cml Atlantic. OG 1052

What was the story in the end with your amber lager and the homebrew club? Any danger of expulsion for not brewing the international lager requested? 😉

I won't be expelled, i explained myself to the group last month. 😁

I bottled it about 10 days ago, i'm not sure what it'll end up like, we are supposed to bring them in for tasting at the end of May, it won't be ready so I may have to make my excuses.

Annoyingly one of the hop bags burst open and there were a lot of floaters despite a prolonged cold crash.
 
Righto, Dubbel time!

Used the recipe from the 'bible', switched the hops to Saaz as that is all I had, ibu at around 20.

5kg Pilsner
400g Special B
300g Caramunich 1

Mashed for 60 mins @66

Boiled for 60 mins!
35g Saaz @60
20g Saaz & 15g Perle @15
400g Candi Sugar @ 5

Cooled and pitched MJ21 Wit. OG a couple of points down at 1064.

Really hungover today but thought i'd get a beer on whilst wife and kids are out....

Mash on for a Phoenix Porter that i've had planned for a little while.

Similiar malt bill to my Chinook Porter, 5 kg Pale, 350 choc, 300 special B and some carapils.

30g Phoenix @ 60
30g @5
40g Whirlpool.

Should end up around 35 ibu, and looking to be around 5.5%, yeast will be CML Atlantic.
