Hefeweizen is a different beast, no doubt.
But for every other style, ferment it to FG and give it a good few days more regardless of how long it takes. TBH I do that with hefeweizen too, it's just that it really doesn't take long to get to FG! :lol:
My 14 day thing is just convenience - brew one weekend, bottle it two weeks later (if it's finished). I never bother crash cooling or cold settling. Although lagering lagers is IMO essential.
