Hefeweizen is a different beast, no doubt.

But for every other style, ferment it to FG and give it a good few days more regardless of how long it takes. TBH I do that with hefeweizen too, it's just that it really doesn't take long to get to FG! :lol:

My 14 day thing is just convenience - brew one weekend, bottle it two weeks later (if it's finished). I never bother crash cooling or cold settling. Although lagering lagers is IMO essential.

Too right, I would always put a lager emphasis on largering larger for the lagerest period of time you can :sick:

Bottle, then in the hotpress for a week then into the garage on a concrete floor. Works a treat.

21 days is quite a long time...I'd be careful leaving it in the primary fermenter for too long as your yeast can go into autolysis. This means it will start eating itself and turn the flavor of your beer. But that's great it has worked out so far for you!

21 days in the FV for me is only when I can't bottle after 14days. I have only gone to 21days once and the beer tasted great. 14days would be my standard time in the FV.

Another question, could I bottle half the brew ( I have the new Coopers FV so just attach the bottler) and the dry hop for a couple days afterwards? I did this brew with a friend and he has dibs on half, but I want mine hoppier?
