One lesson I have learned, sampling early = disapointment. Give it at least 1 week per unit OG (e.g. 1.040 = 4 weeks) before drinking. My Winter Ale tasted undrinkable after 2 weeks (Muntons instructions said it would be OK) but is tasting good after 5 weeks; OG = 1.054.i know ill give it a week or so but i dont think i can hold back the sampling beyond that

Ahhhhhhhh but you only found out the lesson re your Winter Ale by sampling early
so really you're only reinforcing the argument for sampling at all stages to see just when it is ready :wha:
